Soy-braised Dried Shiitake Mushrooms Wrapped in Kamaboko
Shiitake Kamaboko was the first creation developed by our president, Junsei Uemura, after returning from his apprenticeship.
We slowly simmer dried shiitake mushrooms in a secret soy-based sauce, then sandwich them between layers of premium fish paste.
We use dried shiitake instead of fresh ones because they have a deeper flavor, richer aroma, and higher nutritional value.
Each piece is carefully grilled by hand to achieve a beautiful golden finish.
Slice it into 1 cm pieces and enjoy as is. The savory flavor of the shiitake, the delicate taste of fish, and the fragrant grilled surface will captivate your senses.
